    I created this sauce when I could not easily find a commercially made hot sauce that was oil- and sugar-free—and also tasted really good! Plus, I really wanted to control the heat to my personal preference. This delicious sauce meets all my specifications. It also stays fresh in the fridge for a good long time, so I can make a batch and keep it awhile. I call that an all-around winner! Makes about 1 cup. —DT

    I make a lot of this zesty dressing in the summer when raspberries are fresh at the farmers’ market. It’s very good on spicy greens like arugula. I eat it on anything, including a spoon. It is refreshing and light, and delicious. Makes about 1 & 1/2 cup.—DS

    A friend of mine taught me his family recipe for salsa roja de molcajete, or tomato salsa made in a traditional stone mortar and pestle. I’ve adapted it so that I can make it without the molcajete. Roasting the chile and the tomatoes brings out the authentic earthy taste even without the traditional tools. Makes about 1 cup. —DT
